weight watchers taco chili recipe.

What you will need:
1 lb. ground turkey *We use the turkey breast because it's so lean and delicious. You can use beef if you prefer!
1 large onion, chopped *I use a sweet onion because they are so delicious.
1 (1 oz.) package hidden valley ranch dressing mix *I use half the packet; too much for me otherwise.
1 (1 oz.) package taco seasoning mix *I use half the packet.
1 (16 oz.) can chili beans (hot or regular, your preference.)
1 (16 oz.) can light red kidney beans *But really, you can use whatever beans you want... pinto, black beans, etc.
1 (16 oz.) can whole kernel corn *I get the no salt added.
1 (8 oz.) can diced tomatoes (any flavor)
1 (8 oz.) can stewed tomatoes

Onto the cooking...
Brown your meat & onions and then drain.
Mix in the ranch and taco packets.
Add your cans to the mixture, UNDRAINED.
Simmer for about an hour!

It is just delicious. Tony and I have made Taco Potatoes before as well... we bake potatoes and add the chili on top of the potato and then sprinkle cheese, sour cream, lettuce, & crunched up taco chips.... and that is just SO delicious! I just love this recipe so much and wanted to share it!

Ours.

So, it is March. I'm starting to get a little stressed over the fact that there is not very much time left to plan this wedding! I know I shouldn't be like this, but from the beginning Tony & I knew we'd have a somewhat long engagement, so I always thought of our wedding with my head up in the clouds. And now it's getting down to the serious choices and I am freaking out. 73 days until we are walking down the aisle! It feels like time is moving SO MUCH faster than it was a few months ago when I was BEGGING for time to speed up. We're heading to Memphis in a few days for our first wedding shower for Tony's side of the family.

I need to get back to life, but I just wanted to stop and breathe for a sec. Love to everybody.
